This is the cuisine of the states of Uttar Pradesh, Himachal, Uttarkhand, Delhi, Punjab, and Central India. It is the mainstream cuisine found in many restaurants outside India. North Indian cuisine can be vegetarian or non-vegetarian and typically uses a lot of dairy. There are Mughal influences that include nuts and dried fruit, and culinary techniques such as grilling, particularly in the tandoori oven. North Indian cuisine also showcases a variety of breads, such as naan or paratha.
