The Sauté setting is used at the start of recipes to heat the oil and brown the spices, onions, ginger, garlic, and other base ingredients that are needed at the beginning of almost every one of my recipes, since in Indian cooking sizzling or blooming spices in oil is often how a recipe begins. It is important to let the oil heat at least a minute or two before adding the whole spices. Do not be daunted when the Instant Pot® says hot.
