Walnuts

The king of nuts: the fruit of the solid, ancient trees that grace the landscape of eastern, central and western Anatolia, including the environs of Istanbul. They are the favoured nut of Istanbul cuisine, used in many sweets and syrupy pastries and pounded into a heavier version of tarator sauce to accompany deep-fried seafood.
