This green leafy vegetable, known as Jew’s mallow or jute mallow, is “Lebanese spinach.” Although it is seasonally available as fresh leaves or dried, I use the very convenient frozen chopped variety. Mloukhiyeh can be prepared as a stew and served with lamb, beef, and/or chicken, rice, toasted pita croutons, and an onion-vinegar sauce.
