An uncased, fresh beef sausage made in a large rectangular block and cut in slices approximately 10cm square. Known as a Square or Sliced sausage everywhere besides Glasgow where it is known as a Lorne sausage after the popular Glasgow music hall comedian, Tommy Lorne, whose derogatory remarks about the square sausage ‘doormats’ became legendary. Its shape was a convenient fit for a morning roll, making a favourite breakfast with a fried egg on top.
