To make this delicious spicy, Middle-Eastern topping, simply toast 2 tablespoons sesame seeds in a dry pan for a couple of minutes, until they smell ‘toasty’ and begin to turn a slightly deeper colour. Remove from the heat and whiz briefly in an electric coffee grinder, then mix with ½ teaspoon sea salt (or pink Himalayan salt), 2 teaspoons ground sumac (a delicious spice that you can buy from Middle Eastern stores), and 2 tablespoons chopped fresh thyme. Sprinkle over the hummus, or serve it in a bowl for people to help themselves.
