Rigani dried leaves and flowers of a Mediterranean marjoram, Origanum dictamnus. Best substitute is Italian oregano, the ‘pizza herb’: it is not the same, but it comes closer than the usual marjoram. Dried stalks are sold in bundles in Greek markets.
