Sesame from sesame seeds, which can be used toasted in both savoury and sweet dishes, sesame oil is extracted and tahina paste made. Both can be bought at health food shops, oriental stores and in good delicatessens. Sesame seeds are also used to make a sweetmeat known as sesame halva, which may be flavoured in various ways, with vanilla or chocolate or pistachio nuts: this has become much easier to buy in the last few years, but can always be found at health food stores and often at delicatessens. Sesame oil has a delicate distinctive flavour, and, since it is much used in Chinese cookery, you are certain to find it in Far Eastern stores.
