Traditional American pancakes are about 10 cm in diameter. Also popular are the fun-sized “silver dollars ” shown here, so-called because of their shape. Like Scotch pancakes, they are about 5 cm in diameter. Make them on a griddle, or in a heavy-based frying pan. Test the temperature of the pan by sprinkling over a little water; it should sizzle and evaporate. Grease lightly before spooning on the batter.
Make the batter (see box). Place tablespoons of batter on the hot griddle, spacing them well apart.
Cook until the edges are brown and the tops bubbling. Turn with a palette knife; cook until golden.
