Fresh cheeses are extremely versatile because they are soft enough to be piped. Here homemade fresh cheese is mixed with herbs and piped into an array of vegetables - hollowed-out cherry tomato halves, blanched and scooped-out patty pan squash, blanched and opened-out mangetouts.

  1. Mix cheese with chopped fresh herbs and seasonings to taste until evenly blended.

  2. Put cheese in a piping bag fitted with a star tube and pipe into prepared vegetables.
