The rubbery ring that forms a brown edge to the mussel flesh should be removed.

  1. Clean mussels and stem them open. Remove them from the cooking liquid and then from their shells.

  2. Carefully pull off the rubbery ring that surrounds the flesh with your fingers and discard it.
