Some pea varieties, such as mangetouts and sugar snap, are cultivated to be harvested young and eaten in the pod. They need only to be stringed before being used raw in salads, or cooked. Other peas are picked later, when the pods are full. They are shelled and the pods discarded. Both types are best cooked briefly, either steamed, boiled or stir-fried.
Stringing
For mangetouts and sugar snaps, break off the stalk and pull off the string.
Shelling
Press the base of pea pods to open, then push your thumb up the pod, removing peas.
