Shredding and Chopping Nuts

Although most nuts can he bought ready chopped, flaked and shredded, you may not always find what you need. Nuts that are cut just before use will taste fresher and be more moist.
Shredding
Place nut, flat-side down, on a cutting board and cut lengthwise into shreds.
Flaking
Place nut, thin-side down, on a cutting board. Steady one side; cut into long, thin flakes.
Chopping
Put shredded nuts on a board Steady knife and work blade backwards and forwards.
