Chilled nut butters make tasty toppings for hot food, and are quick and easy to make in the food processor. Almond butter is good with fish, hazelnut or pistachio with poultry and meat. If sugar and spice are added, nut butters taste good on hot barbecued fruits.
Grind toasted nuts in a food processor fitted with the metal blade. Add twice as much butter as nuts and blend together using the pulse button. Turn out the nut butter and shape into a log on baking parchment, then wrap and refrigerate. Slice as required.
