Fresh egg pasta must he dried thoroughly before storing. Dust it with a little flour and place it in an airtight container in the refrigerator for two days.
Tagliatelle
Take a few strands and curl them loosely around your hand to make bundles. Place side by side on a floured dish. Let dry 1-2 hours.
Lasagne
Put lasagne rectangles or squares side by side on a floured tea towel. Cover with another floured tea towel. Let dry 1-2 hours.
