Fresh wonton wrappers (see box) can enclose savoury fillings to make the Chinese snacks known as dim sum. Use the same filling as in the Chinese dumplings on the opposite page.
Put 1 tbsp filling in the centre of each wonton wrapper. Lightly brush the edges of the wrapper with water. Bring the wrapper up around the filling and pinch and twist to make a purse.
Put a few dark leaves of Chinese cabbage in a bamboo steamer, then put the steamer in a wok filled with 1 litre water; bring to the boil. Place the purses well apart on the leaves, cover and steam until tender, about 15 minutes.
