Breadcrumbs provide a protective coating for fried and baked foods. They also thicken soups and help bind stuffings. For dried crumbs, bake fresh crumbs at 190°C for 3-5 minutes. For fried crumbs to serve with game, fry fresh crumbs in hot oil and butter until golden, 3-5 minutes.

  1. To make fresh breadcrumbs, put torn pieces of crustless bread into a food processor and pulse until fine crumbs form.

  2. To give the breadcrumbs a fine, even texture and remove any lumps, work them through a fine metal sieve held over a large bowl.
