The cake should be golden and risen and shrinking slightly from the sides of the tin. There are two further tests, depending on the cake you are baking.
Sponge Cake
Lightly press the centre of the cake with your fingertips: it should spring back.
Fruit cake
Insert a metal skewer in the centre of the cake: it should come out clean.
