These traditional aromatic blends are greatly favoured by European cooks, who use them to flavour meat and poultry dishes, as well as cakes, biscuits and puddings. The old-fashioned English pickling spice mixture is used in vinegars and a variety of condiments.
Mixed Spice
Also known as pudding spice. Finely grind 1 tbsp coriander seeds, 1 tsp each allspice berries and cloves, and 1 cinnamon stick; mix with 1 tbsp grated nutmeg and 2 tsp ground ginger.
