Eggs quickly lose their freshness at room temperature, so keep them in the fridge in their box or in a covered container to prevent them losing moisture and absorbing fridge odours through their porous shells. They will keep for 3 weeks in the fridge. Bring them out 30 minutes before use and let them come to room temperature.
Don’t wash an egg unless you are going to use it immediately. Washing removes the egg’s protective film and will cause it to deteriorate more rapidly.
