Method
  1. To prepare your soufflé dish, first melt a little butter and use a pastry brush to brush this lightly over the base and side of the dish. Then tip in a tablespoon or so (depending on the size of the dish) of dried breadcrumbs, turn the dish around so they cling to the butter and coat the base and side. Tip out the excess. This will help the soufflé cling to the side of the dish and rise evenly.
  2. You can prepare a paper collar for your dish to help the soufflé rise straight and high. Simply wrap a double layer of baking paper around the outside of the dish and tie with kitchen string.
