These are made in a variety of sizes and shapes such as pyramids, cones and cylinders. The goat or sheep flavour can be mild or pronounced depending on how long the cheese has been aged. These can be classed under other categories (feta is a fresh cheese, and many goat’s cheeses have natural rinds). Chèvre is the term for fresh goat’s cheese.
