Soft-Rind Cheeses (Bloomy or Flowery Rind)

These have white mould growth, which may be speckled with pink, yellow or grey on their rinds and a creamy smooth pâte that bulges when ripe. Brie, camembert, bonchester, coulommiers and chaource, and some blue cheeses fit into this category.
