A boneless steak from the sirloin, which often has the best flavour, and can be cut short or long. In America, this is not always boneless, depending on which part of the sirloin it is cut from. In Australia, a boneless sirloin with the fat removed is called a New York steak, while in America a New York steak is a cut from the loin when the fillet has been removed.
