The terms crayfish and lobster are often used interchangeably in Australia but the general difference is that lobsters live in the sea, while crayfish live in rivers or lakes. A lobster has a pair of large front claws, while crayfish do not. There are about 40 species of crayfish, including marrons and yabbies, freshwater species of crayfish (pictured far right), as well as another type of crayfish called, confusingly, rock lobster or spiny lobster (pictured right). In America, crayfish are called crawfish. Prepare and treat crayfish as lobsters.
