Method
- Cut into the membrane on the underside of the lobster, where the head and body join, to loosen Twist or cut off to remove the tail.
- Cut down both sides of the shell on the underside, between the flesh and soft underside shell using a pair of scissors.
- Peel back the soft undershell. Gently pull out the flesh in one piece. Pull out the vein from the back with your fingers or when cutting.
