How to... Fillet Round Fish

Method
  1. Cut through the backbone and down the side of the head of the fish.
  2. Lift the fillet by running your knife blade between the flesh and the bones until you reach the tail end.
  3. Turn the fish over and remove the other fillet in the same way.
