How to... Fillet Flat Fish

Method
  1. Lay the fish with the dark skin side facing up. Cut behind the head, then down the centre of the spine.
  2. Cut around the edge of each fillet and lift off with the knife to cut between the fillet and the bone.
  3. Turn the fish over and remove the other two fillets in the same way.
