Fresh anchovies can come as a surprise to many of us who thought anchovies only existed in tins and jars. These tiny Mediterranean fish, like sardines and whitebait, belong to the herring family and can be found at your local fishmonger. Some recipes ask for tinned anchovies and they can add a wonderful flavour to many dishes — they have been salt-cured and packed in oil. Because of their saltiness, some recipes specify for them to be soaked in water or milk for a while before cooking.
