The grains of brown rice have had their husks removed, but the outer bran layer is left intact, not milled and polished like white rice. It is the most nutritious rice and has a pronounced nutty flavour. It takes longer to cook than most other varieties of rice. Brown rice is available both as a short- and medium-grain rice.
