Made from rice, millet and yeast in the Chinese province of Shaoxing, this is a fermented rice wine with a rich, sweetish taste, similar to sherry. Chinese rice wine, or Shaoxing rice wine as it is also known, is used in Asian cooking in stir-fries and meat dishes. In China, good-quality rice wine is served warm as a drink in small cups. If Chinese rice wine is unavailable, dry sherry is the best substitute.
