A bouquet garni is a bundle of herbs tied together with string. It is used for flavouring stews and soups and then removed at the end of cooking. To make a bouquet garni, wrap the green part of a leek around a bay leaf, a thyme sprig, a parsley sprig and some young celery leaves. Tie the stems with string. You can tie this to the pan handle so you can find it easily when the dish is cooked.
