These are the dried berries of the pimento tree indigenous to the West Indies, where it is used for ‘jerk seasoning’. Allspice is used whole or ground. The taste is a combination of nutmeg, cinnamon, cloves and black pepper. It is used to flavour curries, relishes, preserves and marinades, and to give a mild spiciness to cakes and biscuits. Grind the berries prior to use. Not to be confused with mixed spice. Also known as Jamaica pepper and pimento.
