The dried aromatic unopened flower buds of an evergreen tree native to the Moluccas (Indonesia). Used whole to flavour stews, game dishes and traditionally to decorate whole ham. Also added to blended spice mixtures. The bud head is ground and used in sweet and savoury dishes, spiced wines, and liqueurs. Available whole and ground.
