Indian curry powders can include up to nine ingredients, with the spices used varying regionally. Versions include Madras, rendang, Ceylon, tandoori and vindaloo. To make your own Indian curry powder, dry-fry separately 2 teaspoons cumin seeds, 2 teaspoons coriander seeds, 2 teaspoons fenugreek seeds, 1 teaspoon yellow mustard seeds, 1 teaspoon black peppercorns and 1 teaspoon cloves, then grind to a fine powder using a mortar and pestle or spice grinder. Mix with 1 teaspoon chilli powder, 2 teaspoons ground turmeric, ½ teaspoon ground cinnamon and ½ teaspoon ground cardamom. Store in an airtight container.
