These have vanilla, sugar and cocoa butter added to them. Their sugar content varies slightly, but they are interchangeable in recipes. Good-quality chocolate is glossy, smooth and slightly red in colour. It snaps cleanly, melts easily, has a sweet, fruity smell, and real flavours (vanilla, nutmeg) are used to make it.
