Puff pastry consists of hundreds of layers of dough interlaced with butter. It is sold frozen in block form, or in ready-rolled sheets, or there is a recipe to make your own puff pastry. If using ready-made puff pastry, thaw the block pastry and roll out according to the recipe. The pastry sheets can usually be separated while still frozen, so you can thaw just the quantity required for a particular recipe. Always choose butter puff pastry, as the flavour and texture are superior to those made with commercial margarines.
