How to… Segment Oranges

This simple technique cuts the orange into neat segments, and removes the tough membrane. Work over a bowl to collect the juice.
Method
  1. Cut a thin slice from each end of the orange. Stand the fruit upright and slice off the skin and pith following the curve of the fruit.
  2. Holding the orange in one hand, slice down the side of each segment to the core to free it from its membrane. Continue to work around the fruit, folding the membranes back as you release each segment. Once you have removed the orange segments, squeeze the core and membranes over the bowl to collect any remaining juice.
