To test if your jam is cooked, lift up the wooden spoon and see if the jam falls off it in drips or sheets. When it falls in sheets, drip a little onto a chilled plate. Return the plate to the freezer to cool for 30 seconds, then push your finger through the jam: if it wrinkles up as you push, it’s ready.
