These are very popular in southern China and throughout Southeast Asia. They are white, come in a variety of shapes and names - from wide flat ones to vermicelli-thin round ones, and those called ‘fun’ noodles - and are usually dried. One of the most common is rice stick noodles, which are flat and about the length of a chopstick. They can also vary in thickness. Try to use the type called for in the recipe to give the best results.
