These, like noodles, are made from egg and flour and can be bought fresh or frozen from Chinese grocers. They are thin pastry-like wrappings which can be stuffed with sweet or savoury fillings, and fried, steamed or used in soups. They are sold in little piles of 8cm/3ΒΌin yellowish squares, wrapped in plastic. The number of squares or skins varies between 30-36 depending on the supplier. Fresh skins will keep for up to five days if stored in plastic film or a plastic bag in the fridge. If you are using frozen skins, just peel off the number you need and defrost thoroughly before using.
