  • About
Clams come in several varieties, but the main categories are hard shell and soft shell. As their name implies, hard-shell clams have hard shells, like those of mussels or oysters. Soft-shell clams, also called steamers, have thinner, friable shells that crack relatively easily but are in no way soft. Steamers also have a little spout that sticks out of one side and prevents the clam from ever fully closing. Occasionally, you may encounter razor clams, soft-shell clams that are shaped like an old-fashioned straight razor and have sharp edges.
