Grilling fish would be as straightforward as cooking chicken if it were not for its tendency to stick to the grill. While there is no foolproof way to avoid this, some precautions will help most of the time. If you are grilling whole fish, you can leave the scales on and just have the guests peel off the skin, scales and all. But this of course means you don’t get the crispy skin. Or, you can also flour the scaled fish and wipe or spray the grill (remove the grill grate from the fire to spray), which should be immaculate, with nonstick cooking spray.
