Extra virgin olive oil is the universal oil for pesto sauces, but it is worth adding nut oils to bring out the flavor of the nuts. If you are making the sauce in a blender or food processor, use half pure olive oil and half extra virgin olive oil. Process the pure oil into the pesto and then work in the extra virgin oil by hand.
