After mixing up excellent ingredients to make a batch of cookies, you certainly don’t want to burn them while they are baking. Follow these simple rules to avoid burning cookies.
Use an oven thermometer to make sure your oven is actually running at the temperature it’s set for. Bake cookies in the middle level of the oven for even coloring and best results. As the cookies are baking reverse the position of the pan from front to back once or twice. If you are baking more than one pan of cookies at a time, place racks so they divide the oven into thirds. Double the pan or use an insulated cookie sheet on the lower rack. About a third of the way during the baking time, switch the pan from the bottom of the oven to the top and vice versa (remember the pan on the bottom of the oven should be doubled when you switch racks). Also rotate the pans back to front for even coloring. Work quickly so the oven doesn’t lose too much heat while you are switching the pans around.
