June-September. This beautiful salad stands tall and straight. Its shiny crisp leaves are so brittle that my Aunt Célestine refused to submit them to the ordeal of washing and the salad basket. She took off the leaves one by one, and wiped them delicately with a cloth – a real act of love. Seasoning: olive oil.
