Pineapple plays a role similar to unripe mangoes in some curries, but this fruit is used when ripe, so its sour taste comes with its own built-in sweet balance. Perked up with chiles and stewed with sweet golden raisins, pineapple becomes a great accompaniment to our curries, especially in the northeastern corner of India.
