In their extract form these infuse north Indian and Pakistani curries and are prized for their aroma. Kewra water, a highly perfumed clear liquid, is derived from the tropical screw pine tree. Its aroma, which is the main reason why it is used in sweet and savory dishes, has been described as a cross between rose and sandalwood. Although the plant is pervasive in India, its usage is limited to the northern regions including Pakistan; hence its wide availability in Indian and Pakistani grocery stores.
