When it comes to mincing garlic, ginger, onions, and fresh herbs, food processors and mini choppers are a time-saving boon for busy cooks. There are many well-known brands of electric food processors. Handheld non-electric mini choppers rely on the user’s strength to pulverize and mince herbs and spices. When making purees and coarsely chopped pastes, both appliances work well, especially when combining dry spices, fresh herbs, and liquids. Large and small food processors, and handheld mini choppers, don’t do a good job with small amounts of fresh chiles; this is one instance where you’re better off with a sharp chef’s knife. These appliances do work well for mincing large volumes of chiles, ginger, garlic, onion, and fresh herbs. Use the pulsing action to mince herbs, onions, and so on, especially if you do not want too much of the ingredients’ moisture in the mix.
