Bhutanese and Goan red rices are common in India: the former is grown in Bhutan, a country just northwest of Assam, in the far northeast, and the latter is native to Goa, in the far southwest of India. These are medium-grain rices and are cooked like brown rice, with the same rice-to-water ratio (either the absorption or the open-pot method will work). Many specialty stores stock these varieties.
